Episode 56: Fresh Fruit Tart (Requested Recipe)

Making a quick and easy Tart that is made with Fresh Fruit and a Fresh Lemon Glaze! I used Strawberries but you can used any Fruit!!

Crust

1⁄2 cup ( 1 stick) unsalted butter, cold, cut into cubes
1 1⁄2 cups all purpose flour
2 tbsp white sugar
3 egg yolks

Fresh Strawberries, sliced or any fruit

Filling

1 (8-ounce) container mascarpone cheese, softened
1/2 cup white sugar
1 tsp vanilla extract

Lemon Glaze

1 (6-ounce) can frozen lemonade concentrate, thawed
1 tbsp cornstarch
1 tbsp fresh lemon juice
1/4 cup white sugar

Note: Save the leftover Lemon Glaze for Lemonade, Ice Cream, and other Sweet Treats.

For the Crust

Preheat Oven to 375 degrees

Using fingertips, rub butter into flour until mixture resembles coarse meal; stir in sugar and egg yolks; press mixture together to form a ball and refrigerate in plastic wrap for 30 minutes. Roll pastry between two sheets of wax paper, making the pastry large enough to cover base and sides of a buttered 9-inch fluted tart pan; trim edges; place sheet of foil into pastry and fill with pie weights or dried beans; bake 20-25 minutes; remove foil and beans and bake a further 5 minutes; allow to cool. Brush the lemon glaze using a pastry brush.

For the Lemon Glaze

For the glaze: Combine the lemonade, cornstarch, lemon juice, and sugar in a small saucepan and cook over medium heat until clear and thick, about 2 minutes.

For the Filling and Berries

Beat the mascarpone cheese, sugar, and vanilla together until smooth. Spread over the cooled crust. Arrange the sliced strawberries all over the crust. Drizzle a little of the Lemon Glaze on top (optional). Keep the tart in the refrigerator. Remove about 15 minutes before serving. Slice into 8 wedges and serve with a dollop of whipped cream.
