how to make puff pastry dough at home | vegtable puff | bakery style veg puff recipe

Ingredients :
for making puff pastry
maida 200 gm
butter 200 gm
vinegar 2-3 drops
salt a pinch

I have followed vachef’s recipe of making puff pastry .
In a basin take maida , add 1/4th cup melted butter or butter at room temperature , salt a pinch , vinegar 2-3 drops. add water and knead well, form a soft dough cover and rest for 15-20 minutes.
i am using frozen butter here, take out and mash it and make round ir square shape by dusting flour .If it starts melting refrigerate for 5 minutes before using.Roll out rested dough to a thick square sheet and place butter in the center. wrap it from all the sides and roll to a medium thick sheet bu dusting flour. make sure butter doesn’t come out through out this rolling process. so roll gently each time.fold twice and refrigerate for 15 minutes. after 15 minutes take out and roll once again , fold and refrigerate again. repeat this process 4 times. finally roll it to a thin sheet and cut into small cubes, which you have to roll again to make puffs or any other dish.
if you want to store this sheet you can freeze as it is and use whenever you want.

stuffing : for 6 puffs
oil 1 tb sp
green chilli minced 1 tb sp
chopped onion 1 cup
chopped and cooked veggies ( cartot, cabbage, peas, beans ) 1 cup
ginger garlic paste 1 tsp
turmeric a pinch
red chilli powder 1 tsp
garam.masala powder 1/2 tsp
salt as needed

pressure cook veggies and remove excess water from it.add oil to a kadai, once heated add onion , chilli and saute for a few minutes. add salt and ginger garlic paste. after some time add turmeric, red chilli powder, garam masala and cook for a minute. finally add cooked veggies and mix well.
once it’s cooled stuff into pastry sheet, seal edges refrigerate for 5 minutes before baking. preheat oven to 230 deg cel. brush puff surface with butter and bake for about 20 minutes or until they’re done.
