Paris-Brest Recipe

It’s a very delicious Paris-Brest Recipe. Give it a try and make for accompanying you afternoon tea. It was so much fun to make this Paris-Brest. Enjoy!
For Choux
100 g milk
100 g water
50 g butter
10 g sugar
100 g flour
pinch of salt
3 eggs

For the Pastry Cream
200 g milk
2 egg yolks
50 g sugar
20 g flour
15 g cornflour
50 g cream

Preheat oven 200’C
For the Choux:
1. Mix water, sugar and butter and bring it to a boil. Incorporate the flour and salt.
2. In medium heat, whisk the choux until dry. Then cool it down.
3. Once cooled down, add 3 eggs to the dough and keep stirring until well combined.
4. Bake for 20 minutes.

For the Pastry Cream :
1. Boil the milk. Whisk the egg yolk, sugar, flour and cornflour until well incorporated.
2. Once the milk boiled, pour some of the liquid into the flour batter for tempering.
3. Bring back to the pot and whisk until thickened. Sieve the pastry cream for smoother results.

Finishing with dusting cocoa powder on the filling and icing sugar on the top.
