INGREDIENTS

4 egg yolks (18 – 20 g/ egg yolk)
15 g/ 1 tbsp caster sugar
40 g/ 3 tbsp oil
40 g/ 3 tbsp less 1 tsp orange juice
30 g or 1/4 cup all purpose flour
30 g/ 3 tbsp cornstarch
zest from 1 – 2 oranges

4 egg white (30 – 35 g/ egg white)
a pinch salt
1/4 tsp cafe cream of tartar or vinegar or lemon juice
60 g or 1/4 cup + 1 tsp caster sugar
