TIRAMISU BABY CAKE recipe – Cách làm TIRAMISU MINI.

INGREDIENTS

A. Sponge cake

4 egg yolks (18 – 20 g/ yolk)
25 g (1.5 tbsp) caster sugar
60 ml (1/4 cup) milk at room temperature
25 g (2 tbsp) oil
50 g (1/3 cup + 1 tbsp) all purpose flour (can be substituted with cake flour, same amount)
15 g (2 tbsp) cornstarch
15 g (2 tbsp) unsweetnened cocoa powder
2 g coffee powder (optional)
4 egg white (30 – 33 g/ egg white) – at room tempt
a bit salt
1/4 tsp cream of tartar (or lemon juice/ vinegar, same amount)
60 g (5 tbsp) caster sugar

B. Mascarpone cream

200 g (7 oz.) Mascarpone – softened at room temperature
10 ml (2 tsp) Rum
5 ml (1 tsp) vanilla extract
25 g (1.5 tbsp) caster sugar
120 ml (1/2 cup) cold whipping cream 30 – 35% fat

C. Rum coffee syrup

2 g coffee powder
45 ml (3 tbsp) hot water
10 ml (2 tsp) Rum
